2 Ingredient Pumpkin Spice Cake

The first cookbook I bought as an adult was called "Six Ingredients or Less".  That was the extent of my culinary skills as a young woman.  While I do love to bake, I don't like to complicate things and if I find a recipe that's 6 ingredients or less I'm definitely open to giving it a try. So this 2 ingredient spice cake is the perfect combination of ease and taste.  As an added bonus you are swapping oil and eggs for pumpkin puree which makes the dessert healthier, adding moisture, fiber and Vitamin A, while reducing fat and calories.  So basically giving you the excuse to eat the cake because it's healthy! This is a super easy Fall recipe and is great to have on hand for company around the holidays.  Enjoy!
